Moal shares some tips when baking muffins with the help of silicone muffin pans. Moal explains that the key idea to baking moist and tender muffins is to combine all dry ingredients in a bowl. In another bowl, mix all liquid ingredients. In the dry ingredients' bowl, make a well and pour the liquid ingredients mixture.
The dry and liquid ingredients should not be overmixed and should only be stirred for up to 15 strokes. Overmixing can make the muffins full of tunnels and wells. Not overmixing means the batter should still be lumpy just before placing it on the muffin pan.
After mixing all the ingredients, go on with placing batter on the silicone cups. Fill the cups only up to the recommended level according to the recipe. Moal also added, "When you don't have enough batter to fill all the cups in the muffin pan, place some amount of water on the empty cups in order to help even out the heat distribution and to protect the empty cups of the pan from overheating."
The muffins are ready when its top becomes golden brown. "To prevent soggy muffins, allow the muffins to cool in the muffin pan according to manufacturer instructions," Moal shares.
